Do you ever go to bed and before you fall asleep ask yourself: “Did I eat enough greens today?” I used to ask myself that question all the time! Sometimes, I am so busy that I don’t have time to make sure every meal is perfectly balanced. Greens were often forgotten. It’s not your fault, greens, but grabbing an apple is so much faster than making a salad! That being said, I do still love a good apple, just not at the expense of my gorgeous leafy, green companions. I almost never have to ask myself that question anymore; not since the green smoothie came into my life. Ever since that fateful day, the world has made a bit more sense. I have one almost every single day, either for breakfast, a snack or lunch. They are a perfect pick me up!
My palate has changed over my smoothie-making years. At first, when I was younger, I had to have ice cream in my smoothies! When I think of that now, I laugh because I don’t think I have had ice cream in years. Then I started adding yogurt and sugary, juice cocktails, but now I have dialled that back, too. I usually add water to my smoothies; sometimes I’ll switch it up with almond or coconut milk. But I had to start somewhere! I am glad that ice cream helped me to find my smoothie passion. This smoothie has cilantro which I LOVE! It gives an unexpected and delicious taste that goes really well with the pineapple.
But enough babbling! Let’s get to the recipe!
Cilantro Glory Smoothie
- 1/2 cup frozen banana
- 1/4 cup loosely packed fresh cilantro
- 1 large handful of spinach
- 1 cup fresh/frozen pineapple
- 1/2 cup fresh/frozen mango
- 1 cup water
- 1 tbsp lime juice
Blend and be happy!
